Wilmot Natural Beef is a proud offering of Wilmot Cattle Co, a forward-thinking company dedicated to innovation and the rejuvenation of the Australian landscape. Their commitment to soil health, agricultural productivity and a comprehensive sustainability approach – balancing economic viability, environmental stewardship, and social responsibility – is the cornerstone of the exceptional quality of our beef. Their ethos not only guides Wilmot Natural Beef in producing a top-notch product but also propels them forward in the fight against climate change, through proactive carbon sequestration in their landscapes. They are driven by the aspiration to inspire and enable other businesses to embrace regenerative practices, for the betterment of their communities and the natural environments they tend.
Since their inception in 2008 with the acquisition of their flagship property in Ebor, northern NSW, Wilmot Cattle Co has grown to encompass four properties across the New England region. This expansion includes Woodburn, acquired in 2011 and nestled between Uralla and Walcha; Morocco, secured in 2019 and located northeast of Gunnedah; and Paradise Creek, their most recent addition in 2022, situated southeast of Inverell. These properties operate synergistically, focusing on breeding, trading and grass-finishing their cattle, all in alignment with their overarching mission to foster a profitable livestock business that not only uplifts their team and community but also significantly contributes to the ecological wellbeing of their landscapes.

Wilmot Cattle Co & their Principles
Wilmot Cattle Co is deeply committed to principles that can be applied universally, across any environment around the globe. Their journey towards regenerative soil and grazing management was spurred by a growing recognition of their environmental impact and a strong commitment to contribute to climate change mitigation. By transitioning their methods, Wilmot Cattle Co has not only reduced the operational risks inherent in their business but has also shifted towards using animals instead of synthetic inputs to rejuvenate abundance and biodiversity on their lands.
Their grazing strategy is straightforward yet effective, focusing on managing a small number of large herds that move frequently across the landscape. These herds graze on small areas for brief periods before moving on, not to return for a considerable time, ensuring minimal impact on any given area.
The Grazing Principles adopted by Wilmot Cattle Co are inspired by the Resource Consulting Service (RCS) school of management. These principles emphasize the importance of strategic planning, adequate rest periods, aligning stocking rates with the land's carrying capacity, and considering livestock psychology and welfare. Furthermore, they stress the significance of animal density and biodiversity in their grazing practices.
In addition to their grazing principles, Wilmot Cattle Co strives to follow the RCS Soil Health principles, which include meticulous planning, maximising the production of living plants, focusing on soil biology, enhancing biodiversity, maintaining ground cover, and the thoughtful integration of livestock into their systems.
